I don't think it is just the font you need.
You probably need to find a copy of Chinese
Language Kit. It is included in OS 8.6/9.0
CD. I am not sure if it is in the previous
version. Apple used to sell it separately.

CLK supports GB and Big5 code set
For OS 7.5 need CLK 1.0 or 1.1 and the CLK 7.5 updater.
